An awesome way to dress up yellow watermelon. It actually tastes just like red watermelon, but a little lighter, fresher, and more fun to eat.


  • 4 cups cubed seedless yellow watermelon (red watermelon works too)
  • 3 cups cubed jicama or cucumber
  • ¼ cup fresh lime juice
  • Salt and pepper to taste
  • Mint leaves, thinly sliced


  • Toss all the ingredients together and serve immediately!
  • Enjoy!
