Tasty ingredients combine for a salad hearty enough to be a meal by itself.


  • 4 hard-cooked eggs, chopped
  • 4 cups mixed leafy greens
  • 1/2 cup chopped grilled chicken
  • 1/2 cup low-moisture, part-skim mozzarella cheese, cubed in 1/4-inch pieces
  • 1 cup chopped tomato
  • 1/2 cup chopped sweet red or green pepper (try adding mushrooms, and avocado too)
  • 2 Tbs chopped green onions
  • 2 Tbs bacon, crumbled
  • 1/2 cup reduced-fat salad dressing of your choice


  • In a large bowl, toss together all ingredients. Top will favorite dressing.
