Fancy mac and cheese with chicken and lots of veggies.

Ingredients

  • 1 package tri-color spiral pasta
  • 2 Tbs olive oil (more if needed)
  • 2 boneless, skinless chicken breasts
  • 1/2 sweet onion, chopped
  • 1 cup sliced fresh mushrooms
  • 1 lb fresh spinach
  • 2 cloves garlic, grated
  • 1 lb tomatoes (grape, cherry, or Roma)
  • 2 Tbs butter
  • 2 Tbs flour
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese
  • 1 cup Italian blend cheese (or mozzarella cheese)
  • Salt and pepper to taste

Directions

  • Preheat skillet. Prepare pasta according to package directions. Drizzle pan with olive oil. Salt and pepper chicken.
  • Brown chicken breasts on both sides over medium heat. Remove from pan.
  • Add more olive oil if necessary. Add chopped onions, mushrooms, and kosher salt and sauté until soft.
  • Add spinach (you may have to do this a little at a time) and wilt. Add garlic and a little kosher salt to vegetables.
  • Drain pasta and put in a large bowl. Remove cooked vegetables from the pan and add to pasta in the large bowl.
  • Quarter Roma tomatoes or halve cherry or grape tomatoes. Add tomatoes to pasta bowl.
  • Turn heat to low. Add butter to pan and melt, whisk in flour, and cook for 2–3 minutes. Add milk and bring to a bubble over medium heat. Sauce will thicken.
  • When sauce is thick and bubbly, remove from heat and melt in cheeses. Add sauce to pasta bowl and toss to coat.
