Lettuce wraps that are well worth the effort—arrange on your prettiest platter, and serve as an appetizer.

Ingredients

  • 3 Tbs fish sauce, divided
  • 3 Tbs lime juice, divided
  • 2 tsp garlic cloves, finely chopped and divided
  • 1 tsp cornstarch
  • 2/3 lb lamb shoulder, trimmed and finely chopped
  • 2 Tbs light brown sugar
  • 1 tsp chopped Thai bird chilies or crushed red pepper flakes
  • 2 Tbs peanut oil
  • 2 shallots, finely sliced
  • 1 cup mint leaves, coarsely chopped
  • 2/3 cup jicama, peeled, and cut into 1/4-inch pieces, squeezed dry
  • 1/4 red onion, finely chopped
  • 8 sprigs cilantro, finely chopped (leaves and stems)
  • 2 stalks lemongrass, white part only, sliced and finely chopped
  • 1 Tbs galangal or ginger root, finely chopped
  • 1/2 cup roasted peanuts, chopped and divided
  • 2 heads iceberg lettuce, inner leaves, each leaf trimmed to about 4-inches wide

Directions

  • In medium bowl, combine 1 tablespoon fish sauce, 1 tablespoon lime juice, 1 teaspoon garlic, and cornstarch. Add lamb and toss to coat, set aside.
  • To make sauce, in small bowl combine remaining 2 tablespoons fish sauce, 2 tablespoons lime juice, 1 teaspoon garlic, brown sugar, and chilies or crushed red pepper. Stir well, set aside.
  • In medium skillet, heat oil over medium heat.
  • Add shallots and cook for 10 seconds.
  • Add lamb, stir, and cook until no longer pink, about 5 minutes.
  • Mix in sauce.
  • Just before serving, toss lamb with mint, jicama, red onion, cilantro, lemongrass, ginger, and 1/4 cup peanuts.
  • To serve: Put 2 or 3 tablespoons lamb mixture on each lettuce leaf. Top with peanuts, roll, and enjoy.
