Ingredients

  • 1 Tbs olive oil
  • 2 lbs boneless, skinless chicken, cut into bite-size pieces
  • 1 pinch kosher salt
  • 1 green bell pepper, cut into chunks
  • 1/2 red bell pepper, cut into chunks
  • 1/2 sweet onion, cut into chunks
  • 2 cloves garlic, chopped finely
  • 1 head bok choy, cut into bite-size pieces
  • 1/4 tsp five-spice powder
  • 1 Tbs soy sauce
  • 1 tsp oyster sauce
  • Rice2 cups white long-grain rice
  • 2 cups chicken stock
  • 2 cups water
  • 1/2 onion, chopped finely
  • 1 tsp soy sauce
  • 1/4 tsp five-spice powder

Directions

  • Rinse rice. Add all ingredients for rice to a saucepan and bring to a boil. When it boils, reduce to simmer and cover.
  • After 15 minutes, turn heat off and let it set an additional 15 minutes. Never open the lid or stir during this time. When you are ready to serve, fluff with a fork.
  • Prepare chicken and vegetables. Preheat skillet and drizzle with olive oil. Add chicken to hot skillet, add pinch of kosher salt, and brown chicken.
  • Add vegetables, five-spice, soy sauce, and oyster sauce. Cook until vegetables are just tender.
